This  recipe is so easy you won't believe how good it is. You do NOT have to soak these magnificent heirloom beans.

You will need,1 lb of Anasazi Beans, 1/3 cup of SW seasoning mix, water, and salt to taste.

Sort the beans removing any debris or pebbles.  Rinse well and add to sauce pot with 6 cups of water, seasoning mix, and salt. Bring to a boil and cook  2 to 3 hours or until tender.

This recipe is also very good in the crock pot.  Start it on high and if you leave it all day turn it to low.  It will be waiting for you when you get home along with the mouthwatering aroma.

Optional ingredients and variations:
Add 1 cup chopped fresh tomato and 5 slices of chopped up bacon or 1/4 cup diced ham. ( precook bacon half way in microwave for less fat)
Substitute chicken broth or vegetable broth for the 6 cups of water.

Anasazi beans are an heirloom bean.  The seed has never been altered.  This recipe contains our SW Seasoning mix, formerly out Soup Seasoning.  So good customers requested it outside the soup package and use it for many recipes.  Rice pilaf, casseroles, any soup or stew.  It has no added salt so the salt in your dish is up to you.

The main ingredient in this SW Soup Seasoning is mild Hatch NM Crushed Green chili.  If you are a chili fan you can't go wrong.  If you aren't a chili fan you will LOVE this mix.
