Beans are a healthy food.  Half a cup of dried beans is considered one serving.  Beans are a good source of B vitamins and great for the digestive system. 

I'd like to touch on the two beans I carry constantly.  Anasazi and Pinto.   These two beans are kin to each other.  The common pinto is used in endless recipes.  The not so well known Anasazi bean can be used in any recipe you use the Pinto bean in.  I take great pride in these two items because they are so incredibly good.  There is no comparison to eating fresh dried beans as opposed to beans that have sat around for an undocumented amount of time.. 

I love the pinto bean but give the Anasazi a try.  It is sweeter and causes less.......gastrointestinal problems.  This bean also cooks quicker.  You don't really have to do the overnight soak but you can. 

WHEN COOKING BEANS FIGURE FOUR TIMES THE WATER TO BEAN RATIO WHEN SOAKING AND ONE CUP OF BEANS TO THREE CUPS OF WATER (LIQUID) WHILE COOKING.  ADJUST THIS TO YOUR TASTE BUT DON'T LET THE WATER RUN LOW.  It is a good idea to make sure the liquid is about 3-4" above the beans when begining to cook. 

STORE BEANS IN THE BAG IN LOW MOISTURE FOR BEST STORAGE.  THEY DO KEEP A LONG TIME.


BEFORE COOKING DRAIN THE WATER OFF THE BEANS AND DISCARD.  FILL THE POT (ACCORDING TO DIRECTIONS) WITH FRESH WATER OR BROTH BEFORE ADDING YOUR OTHER INGREDIENTS.

ANASAZI BEANS CAN BE USED TO MAKE REFRIED BEANS.  THEY ARE GREAT AND OH SO FLAVORFUL.


Refried beans using either Pinto or Anasazi beans:

3 cups dried beans
1 t Mexican oregano
1 cup cheddar cheese (or yellow cheese of your liking)
I like to use 1/2 Cup ARIZONA SALSA COMPANY TACO SAUCE (red chili based sauce) but you can subsititute:

1 Tablespoon red chili powder (mild or hot)
1/2 t salt
1/2 t cumin
1 t jalapeno powder (optional) 
1 t granulated onion

Rinse and sort beans (soak Pintos overnight, cook for 2 hours or until soft- cook Anasazis for 2 hours, no presoaking required)


When beans are done put drained beans and all ingredients except cheese in the pot together and reheat on medium just until very hot.  REMOVE FROM PAN INTO A LARGE BOWL Then use a potato masher (my preference) or a food processor to blend all ingredients. Add cheese as you are doing the last mix.

Beans are such an easy dish to make.  I like to take the beans and simply cook them in water with salt, jalapeno or green chili powder, onion, galric, and salt.  this is a great tasting easy meal.

Make it even easier by just using our soup mix seasoning.  1/3 cup or more is an easy convenient way to add flavor to the beans, soup mixes, rice pilaf, and many more dishes.  

Another great addition to any bean recipe is crushed green or red Hatch NM chili.  I have come up with a mix of the two that you can find in our catalog.  It does add spice and what a great flavor!
