SW Bean Mix Recipe

Keep in mind that the bean recipes can be used for our SW Bean Mix as well as Anasazi, Bolita, or Pinto beans alone.  Our Beans are always fresh.  Not like what you find in the grocery store.

Our Bean mix includes, Pinto beans, Anasazi Beans, Bolita Beans, and Black Beans.  This mix has a great flavor.

Anasazi and Bolita beans are not well known.  They are both very sweet and can be used in any recipe you use the pinto bean for.  They are sweeter and have less of the gas causing properties of other beans.  You can soak them over night but they do not require it.

Wash and pick over the beans then soak over night. (I do not soak beans.  I prefer the crock pot slow cook all day)
Drain the water off, rinse the beans and add fresh water or broth.  

The black beans in this mix will make it darker but the mix has a great flavor.  Great for the slow cooker or crock pot.  



1 lb Arizona Spice Co SW Bean Mix 
1/3 to 1/2 Cup Arizona Spice Company SW Seasoning Mix (includes Hatch NM Mild Crushed Green Chili)
Chicken Broth (enough fill to 3" over the top of the beans) Can use water or broth of choice.
2 cloves garlic (finely diced or put through a garlic press)
Salt and pepper to taste.


2 Tablespoons Hatch NM Green Chili Seasoning Mix

or to heat it up a bit:
Use 2 Tablespoons of our Habanero Green Chili Seasoning Mix - The flavor of this mix makes it a great addition to just about any food. 


Recipe 2:

1 lb SW Bean Mix or 1 lb Anasazi Beans or 1 lb Bolita Beans OUR BEANS
1/3 to 1/2 Cup Arizona Spice Company SW Soup Seasoning Mix
3 Diced Carrots
1 Cup Diced Ham (or salt pork diced) I find this ingredient to be optional but it adds a lot of flavor.  You can substitute chicken or vegetable broth for the ham.  
2 cloves garlic (crushed or finely diced)
1 bay leaf
2 Tablespoons Hatch NM Red Chili Powder (mild, medium, or hot)
Salt to taste

Both of the above recipes work great in a slow cooker or crock pot. Add all ingredients together.  The SW soup mix seasoning makes this a very easy dish. If you choose to cook it in a sauce pan bring it to a boil then simmer for 3 hours or until the beans are tender.
