Why spend all day in the kitchen when you can make a meal that tastes like you did. These recipes are easy and delicious. I give alternatives and optional additions to many things. Tried and tested you will know very soon what your preferences are.
Blackened BBQ Grilled Chicken
4 boneless, skinless chicken breasts
1/4 Cup Olive Oil
2 Cloves Crushed Garlic (optional but adds great flavor)
Wash and clean chicken well. To a zip lock bag, (I use gallon size bags) add remaining ingredients and distribute evenly. Add chicken and seal bag. Roll bag side over side a few times until all chicken pieces are coated. Place on bottom rack of refrigerator and let marinate for at least 3 hours. Over night is best. The longer you marinate it the stronger the flavor.
The regular BBQ is spicy so if you want more flavor and less heat, use less or use the Hickory or salt free BBQ rub.
Grill chicken on medium high (if you have a choice) for 4-6 minutes on each side or until cooked thoroughly in the center. Be careful not to dump the oil in the grill or it will flame up. Use tongs to remove the chicken from the bag.
Leftover chicken from this recipe makes an easy stir fry.
In a large frying pan add:
3 T olive oil
1 medium onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
2 cloves crushed garlic
2 jalapeno peppers, thinly sliced (optional)
2 or 3 leftover grilled chicken breasts.
1/4 cup chicken broth or water (Add last ifor moisture)
Heat oil for a few minutes on medium heat. Add sliced vegetables to pan in the order listed above, Stir fry these ingredients on medium heat until just beginning to brown. Stir often.
Thinly slice your leftover grilled chicken breast and add to pan with vegetables. Sprinkle on the Mexican Style seasoning mix and toss well with a spatula or large spoon Be sure chicken is heated heated thoroughly and mixed well.
If the chicken is a little dry add the chicken broth or water. About 1/4 cup should do it. Mix well and serve wrapped in a tortilla with your favorite toppings or on rice.
Suggestions: In the tortilla add: grated cheddar cheese, diced tomato, shredded lettuce and your favorite Arizona salsa or hot sauce
Sour Cream Optional but great with this dish. Mix in one or our Chili Dip Mixes, Mild, medium or Hot for a great flavor!
